Pumpkin Noodle Soup
  1. Preheat the oven to 200°C fan

  2. Peel the pumpkin and cut into small cubes

  3. Toss pumpkin with oil, salt and pepper on a baking tray

  4. Roast for about 15 minutes until it starts to soften

  5. Pat tofu dry and grate on the coarse side of a box grater

  6. Place grated tofu on kitchen paper and pat dry thoroughly

  7. Remove the tray and add sliced ginger and whole garlic cloves to the pumpkin

  8. Push everything to one side of the tray and add tofu to the other half

  9. Drizzle tofu with soy sauce, maple syrup and olive oil, tossing to coat

  10. Bake for another 20 minutes, stirring tofu halfway through, until golden and garlic is roasted

  11. Cool slightly, then squeeze garlic out of skin

  12. Add garlic, pumpkin, ginger, coconut milk, peanut butter, tahini, tamari, vegetable stock and lime juice to a blender

  13. Blitz until completely smooth and creamy

  14. Taste and season well

  15. Pour sauce into a saucepan and warm gently on the hob

  16. Cook rice noodles according to packet instructions and drain well

  17. Divide noodles between two bowls

  18. Ladle hot pumpkin sauce over noodles

  19. Top with golden tofu, shredded carrots, spring onions and coriander

  20. Finish with a drizzle of chilli oil
