Homemade Chicken Ramen
  1. Heat olive oil in a large pot over medium heat. Add garlic and ginger and cook for 30 seconds until fragrant.

  2. Add chicken broth, water, soy sauce, and sesame oil. Bring to a gentle boil.

  3. Add chicken breasts and mushrooms. Reduce heat to a simmer and cook 15–18 minutes, until chicken reaches 165°F internally.

  4. Remove chicken, shred with forks, and return to the pot.

  5. Add ramen noodles and cook according to package instructions, about 3–4 minutes.

  6. Stir in spinach and cook just until wilted, about 1 minute.

  7. Taste and adjust seasoning if needed. Serve hot with desired toppings.
