Stir in brown sugar and butter chicken paste
Add fresh chillies and coconut milk to create the butter chicken sauce
Simmer until cooked through
Prepare the aubergines by cutting into pieces
Mince the garlic cloves
Cook aubergines with garlic in a separate pan
Add chicken stock, light soy sauce, dark soy sauce, and brown sugar to the aubergines
Simmer until aubergines are tender and sauce is sticky
Garnish with spring onions
Cook rice according to package instructions
Serve butter chicken mince and sticky soy aubergine over rice
