  1. Cook the chicken mince in a pan

  3. Stir in brown sugar and butter chicken paste

  4. Add fresh chillies and coconut milk to create the butter chicken sauce

  5. Simmer until cooked through

  6. Prepare the aubergines by cutting into pieces

  7. Mince the garlic cloves

  8. Cook aubergines with garlic in a separate pan

  9. Add chicken stock, light soy sauce, dark soy sauce, and brown sugar to the aubergines

  10. Simmer until aubergines are tender and sauce is sticky

  11. Garnish with spring onions

  12. Cook rice according to package instructions

  13. Serve butter chicken mince and sticky soy aubergine over rice
