Bo Kho Vietnamese beef and carrot stew
  1. Mix together 2 tsp five spice, 2 tsp paprika, 1 tsp ground cloves, 1 tsp ground cinnamon, and 1 tsp black pepper

  2. Combine 1.5kg beef chuck chunks with 3 Tb fish sauce, 2 Tb soy sauce, 1.5 Tb sugar, 2 Tb minced garlic, and 2 Tb spice mix. Marinate overnight if time permits

  3. Brown off the beef and set aside

  4. Add sliced onion to the pot and sauté for a few minutes

  5. Add 3 cloves crushed garlic, 2 stalks lemongrass, 1 Tb tomato paste, 3 star anise, and remaining spice mix. Sauté for a few minutes

  6. Add 3 cups beef stock and 2 cups coconut water, then return the beef to the pot

  7. Simmer for 1.5-2 hours or until beef is tender, adding more water if needed

  8. Add 3 carrots cut into chunks and cook for a final 15 minutes

  9. Serve with buttered roll
