Dice the pork shoulder into big chunks.
Season the meat with salt and pepper, granulated onion and garlic.
In a large pot, add beef tallow and cook on medium heat.
Do not move the meat for 30 minutes.
After 30 minutes, flip the meat
Slice the orange, squeeze for the juice and add half of the peel into the pot.
Add bottom half of onion and the cumin seeds
Cook for an additional 30 minutes.
You’ll know they’re done when they are candy red and soft to the touch.
