Blended Bircher Overnight Oats
  1. Dice the apples into ½-inch pieces, keeping the peel on.

  2. Add apples, lemon juice, cinnamon, and water to a small saucepan.

  3. Cook over medium-low heat, stirring often, for about 5 minutes or until the apples are tender and most of the liquid has evaporated.

  4. If the mixture looks too dry while cooking, add a splash of extra water. Remove from heat and let cool.

  5. Add the rolled oats, apple juice, yogurt, nut butter, chia seeds, vanilla, and salt to a blender.

  6. Blend until mostly smooth and thick, like a pourable batter.

  7. Divide the stewed apples between four jars or containers.

  8. Pour the blended oat mixture over the top.

  9. Cover and refrigerate for at least 1½ hours, or overnight, until thickened.

  10. When ready to eat, top with extra yogurt, coconut flakes, nuts, or seeds if desired.
