Preheat the oven to 420F / 220C
In a food processor add the green onions, garlic cloves, zucchini, and a handful of parsley and cilantro. Pulse it 2-3 times.
Add 2 pieces of chicken breast and pulse twice.
Add 2 more pieces of chicken breast and pulse again.
Add the rest of the ingredients and all the seasoning. Pulse it 2-3 times to get a unified mixture.
Using wet hands, make oval shape kebabs from the chicken mixture and place them on a baking pan. You should get about 30 kebabs.
Spray avocado oil on top of the kebabs and sprinkle flaky salt.
Bake in a preheated oven on 420F for 25 minutes, then transfer to convection broil on 450F for 7-8 minutes to get a nice golden color.
Serve it on a nice plate with a drizzle of tahini, fresh herbs, and a touch of sumac.
