Brown Sugar Pumpkin Coffee Cake
  1. Preheat oven to 375°F.

  2. In a saucepan, brown 1 stick of butter over medium-high heat, stirring often. Let cool.

  3. In a large bowl, whisk browned butter, 2 eggs, 1¼ cup brown sugar, 1 cup pumpkin purée, ½ cup Greek yogurt, 1 tbsp vanilla.

  4. In another bowl, mix 2 cups flour, 1 tbsp pumpkin pie spice, ½ tsp salt, 1 tsp baking soda, 1 tsp baking powder.

  5. Fold dry ingredients into wet.

  6. Make crumble: mix 1½ cups brown sugar, 1½ cups flour, 1 stick softened butter, 1 tbsp cinnamon, 1 tsp salt with a fork until crumbly.

  7. In an 8x8 pan, layer half the batter, crumble, then the rest of the batter, and top with crumble.

  8. Bake 45 minutes.

  9. Glaze: mix ⅔ cup powdered sugar, 1 tbsp maple syrup, 1 tsp vanilla, pinch of salt. Drizzle on top.
