Shanghai Spring Onion (scallion) Noodles 葱油拌面
  1. Heat up the oil in a shallow frying pan and fry the spring onions until gently browned.

  2. Boil the noodles according to packaging instructions, then drain and rinse lightly with water.

  3. Combine soy sauces and sugar in the cooled down oil, season with salt as needed.

  4. Pour the sauce over the noodles and mix thoroughly to coat.

  5. Garnish with fried or fresh spring onions and chilli oil if desired.
