In a bowl, combine the self-raising flour and cornflour.
Pour in the soda water and mix until well combined.
Using your hands, marinate the chicken breast in the flour mixture.
Heat oil in a pan and fry the marinated chicken pieces, placing in one at a time until golden brown.
In a separate bowl, prepare the sauce by mixing together honey and cornstarch/cold water mixture .
Add a pinch of salt to the sauce and stir well.
Once the chicken is fried, strain it and then add it to the sauce.
Serve the honey chicken warm.
