Blanch the greens for 1 minute before transferring to an ice bath
Strain the greens again
Make the dressing by frying the garlic, lemon zest and capers in the olive oil for 2-3 minutes
Turn off the heat and add salt, pepper and red wine vinegar to the dressing
Mix the dressing well
Pour the dressing over the greens
Add parsley, chives, pecorino and lemon juice to the greens
Toss everything together
Serve with more grated pecorino
