Blender Butternut Squash Soup
  1. Preheat the oven to 400°F. Coat the squash in olive oil, salt and pepper, and lay on a sheet tray, flat side down. Roast for 30-40 minutes until soft and cooked through.

  2. Add all of the ingredients to a blender, scooping out the flesh of the squash and discarding the skin. Blend on high for 5 minutes until you see steam. Turn off and taste for seasoning, adjust accordingly.

  3. Serve and enjoy.
