If using store-bought coleslaw mix, simply whisk together all ingredients to make dressing, then combine with coleslaw mix. Refrigerate at least one hour to let flavors meld.
If making your own coleslaw mix, first peel and shred carrot/s, put them in hot water and let soak for 5-10 minutes, then drain and rinse with cold water. This will help prevent carrot from turning your coleslaw orange. Next, finely shred cabbage (a vegetable peeler works great for this) and then toss with ¼ tsp salt and let macerate for 5-10 minutes. If using red cabbage, use the same soaking method as carrots instead of tossing with salt, but ultimately your coleslaw will be pink/purple if you use fresh red cabbage. Whisk together remaining ingredients to make dressing, then combine with coleslaw mix and refrigerate for at least one hour.
