Cut the potatoes into chunks, about ½” thick.
Place the potatoes in a large mixing bowl and add the rest of the ingredients: olive oil, lemon juice, lemon zest, garlic, oregano, and salt. Toss to combine.
Add the potatoes into the air fryer basket and cook at 350 F for 25 to 30 minutes, tossing halfway through the cooking time.
Garnish with fresh chopped parsley and an additional squeeze of lemon if desired.
