Crispy Hainanese Chicken Rice
  1. Simmer chicken marylands for 40 mins in chicken stock with spring onion, ginger and garlic until tender.

  2. Remove, pat dry, brush with sesame oil, season with salt and air fry until super crispy.

  3. Render chicken fat and skin until crispy.

  4. Add garlic, ginger and washed jasmine rice and fry for 1–2 mins.

  5. Pour in reserved chicken stock and cook until fluffy.

  6. Serve with cucumber, bok choy, spring onion oil, sweet soy and chilli sauce
