Soft Orange Cookies
  1. Preheat the oven to 350°F/180°C, and line a cookie sheet with silpat or parchment paper.

  2. In a large bowl using a hand mixer, cream the butter with sugar until smooth.

  3. Add yogurt and egg and beat again for 30 seconds. The mixture won’t be very smooth and that’s ok.

  4. Add the dry ingredients and mix until just combined.

  5. Add the orange juice and zest, and mix again. The cookie dough will be soft and a bit wet.

  6. Use a medium cookie scoop (2 tablespoons), scoop out cookie balls and bake for 12-14 minutes. The cookies are done when they’re lightly browned at the bottom.

  7. Remove from the oven, and allow to cool on the cookie sheet for 5 minutes, then transfer to a wire rack to cool completely.

  8. To make the icing, add powdered sugar to a bowl, then gradually add the orange juice and zest if using and mix until you reach the desired consistency.

  9. Spoon the icing over the cookies, and it will spread and cover the cookies (do this on a wire rack). Garnish with extra orange zest before the icing sets.
