Prepare the broth: Start by heating up oil in a pan then adding in chopped garlic and let that get fragrant (~30-60s). Then add in 2 tbsp of red Thai curry paste and cook for 1-2 minutes, follow that up with 2 tbsp of peanut butter and 1 can of coconut milk. Mix everything together and lastly finish it off with 1 litre of chicken stock. Add salt and pepper to taste.
Once boiling add in your choice of noodles and cook according to the instructions on the package. If it ramen it should be 4-5 minutes and if its udon it should 2-3 minutes.
After the noodles have cooked, take it out into a bowl, add a soft boiled egg on top, chopped green onions and chilli oil.
