Cream Cheese Cookies
  1. In a small bowl, stir together the almond flour, coconut flour, baking powder, and salt and set aside.

  2. Using a paddle attachment on a stand mixer, or using a hand mixer, cream together the cream cheese, butter, and Truvia until fluffy.

  3. Add the egg and almond extract and beat until well incorporated.

  4. Gradually add in the almond flour, baking powder and salt. almond extract and egg.

  5. Cover the bowl and chill the dough in the fridge for about 30 minutes.

  6. Meanwhile preheat the oven to 350F. Line a 9 x 13 cookie sheet with parchment paper.

  7. Remove the dough from the fridge and scoop out the 2 tablespoons of dough at a time. Flatten each cookie.

  8. Bake for 22 minutes, or until golden brown.
