Spicy Beef Stew With Gochujang
  1. Soak short ribs in cold water for 2 hours to remove impurities

  2. Blanch ribs in boiling water with a few slices of ginger for 2 minutes, then drain

  3. In a pot, add ribs, soy sauce, rock sugar, gochugaru, minced garlic and enough hot water to cover

  4. Bring to a gentle boil, leave the lid slightly open, and simmer for 30 minutes

  5. Add carrots and onion, simmer for another 30 minutes

  6. Add rice cakes and cook for another 10-15 minutes to let them soak up the spicy-sweet broth

  7. Serve hot with optional cheese topping
