Cheesy Cauliflower Mushroom Steaks
  1. Preheat oven to 400°F (200°C). Arrange cauliflower steaks on a parchment-lined baking sheet.

  2. Brush both sides with oil and season generously with the herb and spice mix.

  3. Bake for 20–25 minutes, flipping halfway through, until edges are golden brown and the cauliflower is tender.

  4. While the cauliflower roasts, sauté mushrooms in a skillet with oil and garlic for 5–7 minutes until browned. (Alternatively, roast them on a separate sheet during the final 15 minutes of cauliflower cooking).

  5. Remove cauliflower from the oven. Top each steak with the sautéed mushroom mixture and a generous sprinkle of mozzarella and Parmesan.

  6. Return to the oven for 3–5 minutes (or broil for 1–2 minutes) until the cheese is bubbly and melted.

  7. Garnish with fresh herbs and serve immediately while hot.
