In a medium-sized bowl or jar, combine the chia seeds, high-protein yogurt, coffee and maple syrup. Stir thoroughly to ensure the chia seeds are evenly distributed.
Cover the bowl or jar and place it in the fridge for at least 4 hours or overnight. This allows the chia seeds to absorb the liquid and thicken into a pudding-like consistency.
Before serving, sprinkle with a generous amount of cacao powder.
