Miso Glazed Carrots & Yogurt Tahini Sauce
  1. Trim off the tops of the carrots, wash and peel.

  2. Tip, peel one of the ends a bit more to flatten the carrot and it doesn't move around when you lay flat.

  3. Using a knife, do shallot cuts on one end so the glaze goes in deeper.

  4. Mix together the miso paste, maple syrup, rice vinegar, garlic, spiced, sesame oil and olive oil. Add salt and pepper to taste.

  5. Brush ½ the glaze onto the carrots. Bake at 425F for 25 min, brush the rest of the glaze and bake for another 8-10 min.

  6. Mix together the yogurt, tahini, lemon zest, juice, salt and pepper. Add water to thin it out.

  7. Drizzle the sauce onto the carrots, add pomegranate seeds, pistachio, herbs and olive oil.
