Crispy Black Bean Tacos
  1. Put the drained beans, jarred salsa, and taco seasoning in a food processor and blend into a paste

  2. Heat canola oil in a cast iron skillet

  3. Put a scoop of black bean mixture onto each tortilla, spread it across half the tortilla, top with cheese and red onion slices. Fold the tortillas over into a taco.

  4. Fry the tortillas in the hot oil until golden brown, about 2 min per side

  5. Serve immediately
