Cold Spicy Noodles

From Complete Chinese Cookbook, p. 345

  1. Cook the fresh or dried noodles for 3-5 minutes in a pan of boiling water

  2. Cool them in cold water and drain them thoroughly, then toss them in the sesame oil and put them aside until ready to use

  3. Mix the sauce ingredients together, along with 1 teaspoon each of salt and black pepper, in a bowl or in an electric blender

  4. This can be done in advance and then refrigerated, as the sauce is meant to be cold

  5. Pour the sauce over the noodles and toss well

  6. Garnish with the spring onions and serve

  7. If you wish to make this ahead of time, keep the sauce and noodles separate, tossing them at the last moment
