Pumpkin Protein Muffins
  1. Preheat oven to 350F.

  2. Prepare muffin pan with nonstick spray, flour, cupcake liners, however you want to do it.

  3. In a large bowl, combine dry ingredients until combined.

  4. In a separate large bowl, combine oil, pumpkin, eggs, vanilla, and milk together.

  5. Add wet into dry ingredients and fold everything together gently. Top with pumpkin seeds.

  6. Fill muffin tin and bake for 20 minutes until toothpick comes out clean.

  7. Cool and enjoy. These can stay at room temperature for 4-5 days.
