Smoky Brothy Pinto Beans
  1. Soak beans with boiling water for 1–2 hours

  2. Prep mirepoix (onion, garlic, and bacon)

  3. Drain and rinse beans

  4. In a separate pan, render the diced MyBacon with oil until lightly crisp

  5. Add diced onion and cook until softened

  6. Stir in minced garlic

  7. Add smoked paprika, granulated garlic, and granulated onion, cook briefly to bloom spices

  8. Add beans and 8–10 cups water, bring to a slow boil

  9. Add bay leaves

  10. Simmer for 1–2 hours until beans are tender, stirring frequently

  11. Season with salt and black pepper to taste

  12. Serve brothy on the first day; it will naturally thicken the next day

  13. Top with nutritional yeast before serving
