Soak beans with boiling water for 1–2 hours
Prep mirepoix (onion, garlic, and bacon)
Drain and rinse beans
In a separate pan, render the diced MyBacon with oil until lightly crisp
Add diced onion and cook until softened
Stir in minced garlic
Add smoked paprika, granulated garlic, and granulated onion, cook briefly to bloom spices
Add beans and 8–10 cups water, bring to a slow boil
Add bay leaves
Simmer for 1–2 hours until beans are tender, stirring frequently
Season with salt and black pepper to taste
Serve brothy on the first day; it will naturally thicken the next day
Top with nutritional yeast before serving
