Prepare Base

  1. Combine sugar, corn starch, and cocoa powder.

  2. Whisk in cream until smooth.

  3. Whisk in milk.

  4. Whisk in egg yolks one at a time.

  5. Heat over medium-low, whisking constantly until thickened (up to 10 minutes).

  6. Increase heat to medium if needed, stirring constantly.

  7. Once bubbling, stir for 5 seconds, then remove from heat.

Finish Pastry Cream

  1. Whisk in chocolate until melted.

  2. Whisk in butter and vanilla until incorporated.

  3. Cover surface with plastic wrap.

  4. Refrigerate at least 4 hours.
