Beat eggs and powdered sugar until light and airy.
Add oil, vanilla, yogurt, and vinegar. Beat again until well combined.
Sift in dry ingredients: flour, baking powder, salt, and food color.
Gently fold with a spatula until just combined (don't overmix).
Pour into a lined and greased 9"x4" mould. Tap to remove air bubbles.
Bake at 175°C in a preheated oven for 50–55 minutes in the middle rack. Use only the lower rod for 50 -55 min,(or until skewer comes out clean) then turn on upper rod for a golden top (last 3-4min).
Let it cool in the pan, remove the paper, slice, and enjoy!
