Kolkata Aloo Biryani
  1. Prep the Masala Gravy by shallow frying the potatoes and grinding all ingredients for the gravy masala into a smooth paste.

  2. Prep the rice by soaking basmati rice, boiling water with spices, cooking the rice and draining it.

  3. For Biryani preparation, saute the spices and onions, add the ground paste, cooked potatoes, salt, onion barista, kewda water, and kesar milk in layers, slow cook for 30 mins, then pressure cook for 5 mins.

  4. Serve with tomato raita.
