In the serving bowl, add all those ingredients listed while you bring a pot of water to boil.
Cook noodles in boiling water according to the instructions on the package. Pour some noodle cooking water into the serving bowl to heat the seasonings (about two ladle-fulls). And then transfer the noodles to serving bowl. Blanch the greens and transfer to serving bowl too.
Garnish peanuts, green scallion slices, minced cilantro, Sichuan peppercorns, and minced Zha cai. Add more chili oil if a stronger taste is wanted!
