Combine flour, salt, sugar and yeast in a bowl. Stir to combine.
Add water and olive oil, mix till well combined.
Cover & rest for 30 mins in a warm place.
Wet your hand. Stretch and fold the dough from bottom to top.
Cover & rest for 30 mins.
Do the second fold. Cover & rest 30 mins.
Do the third fold. Cover & rest for 30mins.
Generously dust the work surface with flour.
Transfer dough onto the floured surface. Gently shape the dough into a rectangle shape.
Cut into 6 pcs. Place onto the pan.
Let dough rest for 15 mins while preheating the oven.
Bake at 220, for 20-25 mins, until golden and crusty
