For the pickled red onions: Combine 2 red onions, thinly sliced, 1 cup vinegar, 1 cup water, 2 tbsp sugar, and 1 tbsp salt.
For the roasted garlic & herb cream cheese: Combine 1 bulb garlic, roasted, 1 pot cream cheese, 2 tbsp mayonnaise, 1 tbsp parsley, finely chopped, 1 tbsp chives, finely chopped, 1 tbsp lemon juice, and salt & pepper, to taste.
For the burger: Grill a large beef patty seasoned generously with salt and pepper, basting with butter as it cooks.
Toast your bun, spread generously with the cream cheese and a pile of pickled onions.
