  2. In a blender or food processor, combine cottage cheese, eggs, and olive oil. Blend until smooth and creamy.

  3. In a mixing bowl, whisk almond flour, baking powder, and salt until combined.

  4. Pour the wet mixture into the dry ingredients and fold with a spatula until just combined. Do not overmix.

  5. Transfer the batter into the prepared loaf pan and smooth the top evenly with a spatula.

  6. Bake for 35–40 minutes or until the top is golden and a toothpick inserted comes out clean.

  7. Let the bread rest in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
