One Pot Vegan Jambalaya
  1. Heat a saucepan over medium heat and add the oil.

  2. Add the sausage and cook until just lightly browned, about 4 minutes, or according to package directions. Remove and set aside.

  3. Add the peppers, onions and garlic along with the salt and cook, stirring often, until the vegetables are tender, about 8 more minutes.

  4. Add the seasoning and cook until just fragrant, about 1 minute, then add the tomato paste and rice.

  5. Cook, toasting the tomato paste and rice, then add in the broth.

  6. Bring to a boil, then reduce heat to low, cover and cook until the rice is absorbed, about 15-20 minutes.

  7. Fluff the rice with a fork, then add in the scallions and cooked sausage, and taste, adjusting salt as needed.

  8. Sometimes I add in a splash of fresh lemon or lime juice just before serving.
