Marcella Hazan's Tomato Butter Pasta Sauce
  1. Add 1.5 sticks of butter and 2 halved medium onions to a large pot

  2. Bring to a simmer over medium heat

  3. Add 2 cans of tomatoes

  4. Leave uncovered and simmer for about 1 hour and 15 minutes

  5. Remove the onion halves from the sauce

  6. Optionally blend the sauce for a smoother texture

  7. Cook pasta in boiling salted water until al dente

  8. Finish the pasta directly in the sauce

  9. Add Parmesan Reggiano cheese and a touch of pasta cooking liquid

  10. Plate and serve with additional sauce and Parmesan Reggiano on top
