Preheat the oven to the temperature indicated on the frozen french fry package.
Pour the bag of french fries out onto a baking sheet into one single layer. Use two baking sheets if yours isn’t large enough. Bake according to package directions. Although I always find that depending on the brand, cooking the fries at least 5 more minutes than the directions indicate will make them extra crispy which I love.
Slice the chicken into thin strips. Season with salt and pepper.
Place a skillet over medium heat. Add 1 tablespoon vegetable oil. Once the oil is warm add the chicken. Cook, stirring occasionally for 6 minutes until the chicken is almost cooked through. Pour in ⅓ cup of the Greek salad dressing and cook for another 3-4 minutes until the chicken has absorbed all the flavor of the dressing and is cooked through.
Remove the fries from the oven. This can be served either ‘nacho style” or on individual plates. Portion the fries out onto each plate, drizzle with a little of the remaining marinade/dressing, top with chicken, dollop with tzatziki and sprinkle over the feta cheese along with any other optional toppings you like.
