Preheat oven to 400°F (200°C).
Toss sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Roast for 20 minutes until tender.
In a skillet, sauté kale in 1 tablespoon olive oil for 3-4 minutes until wilted.
In a bowl, whisk eggs, milk, garlic powder, and paprika.
Combine roasted sweet potatoes and kale in an oven-safe skillet. Pour egg mixture over them.
Sprinkle feta cheese on top.
Bake for 15-20 minutes until eggs are set.
Let cool for 5 minutes before slicing.
