Heat a waffle iron and cook the potato mixture until crispy
Fry 1 large egg in butter or olive oil until the yolk is runny
Top the crispy potato waffle with ½ sliced ripe avocado
Place the fried egg on top of the avocado
Add optional toppings such as everything bagel seasoning, chili crisp, chives, or honey as desired
