Slice zucchini into thin strips using a mandolin.
Salt lightly and pat dry after 5 minutes.
Mix cottage cheese, mozzarella, egg, and seasonings in a bowl.
Lay two zucchini strips overlapping and add 1 tbsp of filling.
Roll tightly into spring rolls.
Preheat air fryer to 375°F.
Spray basket with olive oil and arrange rolls in a single layer.
