Chilli Egg Toast
  1. Make the chilli crisp by heating veg oil with sliced shallots and garlic until fragrant

  2. Add Aleppo pepper, salt flakes, and sugar to the oil mixture

  3. Stir in toasted sesame seeds and soy sauce

  4. Prepare the yoghurt by mixing Greek yoghurt with lemon zest, grated garlic, and a pinch of salt

  5. Prepare the greens by slicing Cavolo Nero and tossing with EVOO, salt, and lemon juice

  6. Poach fresh eggs in a large amount of boiling water mixed with vinegar

  7. Toast bread and spread with garlic yoghurt

  8. Top toast with sautéed Cavolo Nero and poached egg

  9. Drizzle generously with chilli crisp and serve
