  1. Toss the rhubarb in the sugar and ginger. Set aside for a while until the juices start up run.

  2. Cream the fat and sugar until light and fluffy.

  3. Gradually add the beaten eggs and vanilla.

  4. Fold in the flour.

  5. Arrange the rhubarb on the bottom of a baking dish and spread the batter over the top.

  6. Bake at 180°C for 45 minutes.
