Paneer-style masala tofu
  1. toss all ingredients in a bowl

  2. heat a heavy pan over medium-high with a splash of oil

  3. add tofu in a single layer

  4. let it sear, don't stir

  5. turn pieces until golden and lightly crispy on all sides

finish with a pinch of garam masala and squeeze of lemon
