Stuffed Bell Pepper
  1. Preheat oven to 425°F (220°C) and bring water to a boil.

  2. Cut tops off bell peppers and scoop out the insides. Chop the tops.

  3. Blanch peppers in boiling water for 5 minutes. Drain and place in a greased baking dish.

  4. Heat oil in a skillet. Sauté onion, chopped tops, and jalapeño for 5 minutes.

  5. Add garlic and cook for 1 more minute.

  6. Add ground beef. Cook until browned and crumbled, about 5–6 minutes.

  7. Stir in tomatoes, cooked rice, paprika, oregano, basil, salt, and pepper. Remove from heat.

  8. Mix in half the shredded cheese.

  9. Stuff each pepper with filling and top with remaining cheese.

  10. Bake for 15–20 minutes until cheese is bubbly and peppers are tender.

  11. Garnish with parsley or red pepper flakes. Serve hot.
