In a bowl, mix together orange juice, lime juice, vinegar, garlic, cumin, oregano, cloves, cinnamon, salt, and pepper.
Place pork in the Instant Pot and pour the marinade over the meat. Mix well to coat the pork.
If using banana leaves, line the Instant Pot with them before adding the pork.
Close the Instant Pot and set it to high pressure for 1 hour.
Once done, allow for natural pressure release before opening the Instant Pot.
Shred the pork using two forks and mix it with the juices in the pot.
Serve the Cochinita Pibil with tortillas, rice, beans, or on its own.
