Homemade Ginger Ale
  1. In a saucepan, combine the water, sugar, and shredded ginger.

  2. Bring to a gentle boil over medium heat, stirring until the sugar dissolves.

  3. Reduce the heat and simmer for 10–15 minutes to extract the ginger flavor.

  4. Remove from heat and let it cool completely.

  5. Strain out the ginger pieces and stir in the lemon juice.

  6. Store the syrup in a glass jar in the fridge (lasts up to 2 weeks).

  7. Fill a glass with ice.

  8. Add 3 tablespoons of ginger syrup for every 1 cup of drink.

  9. Pour in carbonated water.

  10. Add a few sprigs of fresh mint.

  11. Stir gently to mix and enjoy.
