Mix filling ingredients well.
Heat 1 tbsp oil. Add chicken balls, cook 1–2 min.
Place wrapper on top, press from all sides.
Add ½ cup water, cover & steam 6–8 min.
Uncover, let water evaporate.
In a bowl: mix garlic, sesame seeds, chili flakes, and green onion.
Pour hot oil over the mixture.
Then add 1 tbsp soy sauce, 1 tsp vinegar, and ½ cup water or chicken stock or vegetable stock.
Pour this directly over the dumplings in the pan and let it bubble for a minute.
Finish with chili oil crunch on top.
