Cook tortellini according to package directions. Drain and set aside. (5–7 minutes)
Heat olive oil in a large skillet over medium-high heat. Add steak pieces and cook until browned. Remove and set aside. (4–5 minutes)
In the same skillet, melt butter and sauté garlic until fragrant. (30 seconds)
Pour in heavy cream and bring to a gentle simmer. Stir in provolone, Parmesan, Italian seasoning, salt, and pepper until smooth and creamy. (3–4 minutes)
Return the steak to the skillet and stir to coat in the sauce. (1–2 minutes)
Add cooked tortellini and gently toss until evenly coated. (2 minutes)
Garnish with fresh parsley and serve immediately.
