Pumpkin Pasta- Gluten Free + Vegan
  1. Roast pumpkin in oven until soft.

  2. Soak the cashews in boiling water for 10 minutes, then drain.

  3. Cook pasta according to package instructions

  4. Fry onions are garlic, then add crushed tomatoes, coconut milk, lemon, smoked paprika, nutmeg and let simmer

  5. Blend ingredients

  6. Add cooked pasta

  7. Heat for about 4-5 minutes until it's warm!

  8. I added in sautéed kale as well!
