Berry Oat Bars

Ingredients:

    Direction:

  1. grease or line a loaf pan

  2. Over medium heat, add blueberries and water to a pan

  3. Bring to boil over medium high heat and then turn down to medium low to allow to simmer for 5-7 minutes. stir every few minutes and slightly mash the berries.

  4. In a bowl mix all the remaining ingredients together. The mixture should hold together. If dry slowly add more peanut butter. If too wet, add more oat flour slowly.

  5. Reserve about ¼ cup mixture for the topping

  6. Pour the remaining mixture into a loaf tin and use your fingers to really press it together.

  7. Pour over blueberry mixture, spread evenly

  8. Crumble on the remaining oat mixture

  9. Refrigerate until set. Once set cut into bars.
