Pumpkin Pudding
  1. Place the instant vanilla pudding mix, evaporated milk and pumpkin puree in a large mixing bowl. With an electric mixer blend until smooth.

  2. Add the pumpkin pie spice into the pumpkin mixture and mix until smooth with the electric mixer.

  3. Place the whipped topping in with the pudding mixture. Mix the whipped topping into the pudding mixture until just mixed.

  4. Split the graham crackers in half. Layer half of the graham cracker crumbs into the bottom of four glasses, followed by dividing half of the pumpkin pudding evenly between the four glasses. Repeat with the rest of the graham crackers and pudding.

  5. Refrigerate until ready to serve or at least 10 minutes. When serving, add a dollop of whipped cream and a sprinkle of pumpkin pie spice if desired. Enjoy!
